Hotdish aka Tatertot Casserole

Equipment

Ingredients
  

  • 1 medium Yellow Onion chopped
  • 1 Lb Ground Beef
  • 14 oz Canned Corn drained
  • 22 oz Cream of Mushroom Soup
  • 2 Lb Tater Tots

Instructions
 

  • Preheat Oven to 350 degrees
  • Allow tater tots to partially thaw before or even pre-fry them before making the casserole
  • Cook the Ground Beef and chopped Onion in large skillet on the stove until the meat is brown and curmbly (approx. 10 min). Remove from heat
  • If the skillet is at least 12" and oven safe move to the next step.
    If not transfer the meat and onion mixture to a 9X13 casserole dish.
  • Sprinkle the corn overtop the ground beef mixture
  • Top with cream of mushroom soup
  • Finally add the tater tots on top. You want the tater tots to be crispy, so ensure they are in a single layer
  • Bake for 45 min or until everything is heated through and Tater Tots are golden and crispy

Notes

You can swap out the corn with your other favorite vegetables - such as mixed vegetables of green beans, carrots, mushrooms, etc.
You could also play around with adding sour cream, grated cheddar cheese, cream of chicken along with the cream of mushroom soup, Worcestershire or hot sauce, and shredded potatoes mixed into the ground beef.

MINNESOTA CREAM OF CHICKEN & WILD RICE SOUP

This is a creamy soup with rich flavor! Easy to make and absolutely delicious.

Ingredients
  

  • 3 & 1/2 C Chicken Broth
  • 1 C Carrots Sliced
  • 1/2 C Celery Sliced
  • 1/3 C Onion Sliced
  • 1/3 C Wild Rice Uncooked
  • 1/2 Tsp Dried Thyme
  • 1/4 Tsp Pepper
  • 2 Tbsp Butter
  • 3 Tbsp Flour
  • 1 C Half-and-half cream
  • 1 & 1/2 C Chicken Cooked and Cut up

Instructions
 

  • Mix Broth, Carrots, Celery, Onion, Rice, Thyme & Pepper
  • Bring to a boil
  • Reduce heat, cover and simmer for 1 hour
  • Melt Butter in a saucepan and slowly stir in the flour mixing with a whisk
  • Add half-half to the butter/flour mixture
  • Cook for 1 minute stirring constantly
  • Slowly add butter mixture to the Rice mixture while stirring
  • Add the cooked chicken and stir allowing everything to heat through

Honeycrisp Apple Crisp

  • Peeler/knife, Mixing bowl, 9x13 or 11x7 pan

Ingredients
  

Apple Mixture

  • 4 Large Honeycrisp Apples Peeled and cubed
  • 1 Tsp Cinnamon
  • 1/2 C Water

Crumble Topping

  • 3/4 C Old-Fashioned Oats
  • 1 C Sugar
  • 3/4 C Flour
  • 1/2 C Butter Melted

Instructions
 

Preheat oven to 350

    Apple Mixture:

    • Combine apple cubes with cinnamon and water and mix well
    • Scoop apples into baking dish

    Crumble Topping:

    • Mix together Oats, Sugar and Flour
    • Add melted butter and stir to coat
    • Top apples evenly with crumble mixture

    Place in oven and bake for 45min until crisp topping is golden brown
